Ultimate Instant Pot Recipe for Simple Refried Beans (2024)

Updated with New (2022) Weight Watchers Points.

I love refried beans. They are so versatile and I love that beans are 0 Points on the Weight Watchers Plan. However, recently at a church function I tasted real homemade refried beans. And let me tell you, it was heavenly. There is no going back to the canned version. So in an effort to recreate the recipe, I came up with the ultimate Instant Pot Recipe for Simple Refried Beans that are only 1 Point on the WW Program. And now you’re going to be able to make it too!

Refried beans are the perfect side dish, dip or filling for a taco, tortilla or burrito. And I love it with eggs (scroll down to see how I use the refried beans with eggs). They are that good and so filling. Not to mention full of protein and healthy for you.

3 Cups of Pinto Beans (Soaked for 4 hours and drained)

1 Large White Onion, Peeled and Chopped

1 Each Red Bell Pepper + Jalapeno Pepper, Chopped

4 Cloves of Garlic, Minced

9 Cups of Vegetable Broth

1/2 Teaspoon Each of Chili Powder + Ground Cumin

Salt/Pepper to Taste

Cilantro Leaves, Optional

DIRECTIONS:

  1. After beans have been soaked for 4 hours and drained, place into the Instant Pot along with all the ingredients and stir to combine. Cover and cook on the Bean/Chili setting for 20 minutes. Release the pressure and strain the beans and vegetables reserving the broth.
  2. Transfer the cooked beans & vegetables to a blender or food processor. Work in batches while adding as much liquid back into the pureed mixture as needed. Garnish with Cilantro if using.
  3. Place into a bowl and serve. This makes 4 servings. Garnish with up to 1/4 cup of Kraft Fat Free Shredded Cheese per serving will keep this at 1 Point per serving on Weight Watchers. Enjoy!

Other Ways to Enjoy Instant Pot Simple Refried Beans

If you like your Refried Beans a bit chunkier like I do, don’t puree them in a food processor. Just mash to whatever consisitency you prefer using a potato masher or this tool that I use. And feel free to add in some fresh cilantro like I love to do after it comes out of the Instant Pot. This was how my last batch looked since I wanted to use it spooned over cauliflower rice in a burrito bowl. Yum!

Refried eggs for breakfast? Yup! This 2 SP Weight Watchers breakfast is fantastic if you follow the Blue and Purple myWW Plans. The extra SP comes from using an Ole Extreme Wellness High Fiber Low Carb Tortilla. I simply spread the refried beans on the tortilla, top with fresh salsa and add an egg “fried” in Butter Flavored Pam. I sprinkle no more than 1/4 cup of Kraft Fat Free Shredded Cheese on top. Delicious.
