Why This Recipe Works

Coming to you from a sketchy motel in Salt Lake City tonight, friends. The whole motel ordeal hasn’t been ideal, but the reason I’m here in Utah is pretty awesome.

For now… Apple Butter Cookies with Oatmeal! This is the yummiest version of the oatmeal cookie that I’ve ever met. I had a jar of Apple Butter sitting in my fridge for weeks and I taunted my boys with the idea of creating an oatmeal cookie with apple butter hidden inside.

Every single day after school they asked me if I had made those cookies yet.. MOM?! The ones with the apple butter inside?!? Finally I made the dang cookies and they were a hit all around. Turns out, apple butter transforms cookies into magical magic.

Recipe Ingredients

Apples –Use mediumbaking apples such ashoneycrisp, gala, golden delicious, jonagold or granny smith. A mix of sweet and tart apples will bring a lot of dimension to the flavor of the condiment.

Brown sugar – If you prefer, you can add more naturally sweet apples and reduce the amount of brown sugar you added. Other sugar substitutes that would be great are maple syrup, coconut sugar or stevia.

Old-fashioned oats – Oat groats are low roasted in order to help inactivate enzymes that would make them go bad while sitting on your shelf. You want to use old-fashioned oats for this recipe vs quick oats because they aren’t as thin as quick oats, therefore won’t become mushy in your cookies.

How To Make Apple Butter Cookies with Oatmeal

Preheat oven to 350 degrees F and line baking sheets with parchment paper. Using a stand mixer fitted with the paddle attachment (or a large mixing bowl with a hand mixer), combine the butter, sugars, eggs and vanilla extract and beat on medium speed until creamy and free of lumps.

In a separate bowl, combine the flour, baking soda, cinnamon and salt. Mix well. Gradually add to the butter-sugar mixture and beat on medium speed until just combined. Fold in the oats and apple butter. Mix until combined.

Using a medium cookie scoop, drop the dough by 1 1/2 tablespoons 2 inches apart onto the prepared baking sheets. Bake in the preheated oven for 9-11 minutes, or until edges are golden brown and centers are firm. Let cool.

Spread extra apple butter over the tops just before serving for extra deliciousness!

Recipe Notes

  • Replace 1/2 cup of the brown sugar with honey for a slightly healthier cookie.
  • A half cup of raisins would be delightful as an optional twist.
  • Spread extra apple butter over top of the cookies just before serving for an extra touch of fun and flavor!
  • Make your own Apple Butter (it’s so easy!) or you can find a jar at the store to make things even easier.

How To Store Cookies

These cookies should be kept in an airtight container for 3 to 5 days in the refrigerator.

I made these this week — very yummy. The only problem was the loose density of the cookie makes it impossible to get off the cookie sheet in one piece. I had terrible times getting them up. I tried greasing the sheet, then increased the baking time to get it crispier, then let them cool on the sheet . All helped but only a little. What other tricks have u come up with to get them off the cookie sheets in one piece?

Hi Shelly, I’m so sorry that this happened. When you’re excited about a recipe and it doesn’t come out as expected, it can be frustrating. It’s hard to pinpoint why you had this issue. Common baking issues that can explain this in general – like old baking soda can impact cookies rising enough. Overmixing can also be a culprit. But it could be something completely else – I’m sorry I can’t get to the bottom of it. Did you add a little more flour to the remaining dough to see if it would help the cookies bind better? It sounds like you tried several good ideas.

No idea. I did mix them thoroughly so over mixing is possible. They had time to rest in the cookie jar so the moisture reached their resting consistency. They taste great, just not solid. I think next time I might try them as a bar and see if that is a solution.

I made these this evening. My homemade apple/pumpkin butter was on the runny side so I figured I would need to compensate in same way. I used an extra cup of oats. Mike consistency was still a bit off from what I would normally expect. I cooked for a few minutes longer and they came out a little cake like. Yummy mild flavor somewhere between a cookie and a muffin top. I am chilling the dough over night to see if that will help. Even as they are I think it’s a good recipe and makes for a great morning snack with coffee.

FAQs

Can I substitute apple butter for butter in cookies? ›

You also might like that the apple butter stands in for a lot of the butter in this recipe, making 12 cookies with just 2 tablespoons of butter. In this case, the apple butter brings enough moisture and sugar to keep these cookies delicious.

What is the secret to moist cookies? ›

Cornstarch helps product soft and thick cookies. Using more brown sugar than white sugar results in a moister, softer cookie. An extra egg yolk increases chewiness. Rolling the cookie dough balls to be tall and lumpy instead of wide and smooth gives the cookies a bakery-style textured thickness.

What is the point of apple butter? ›

Sometimes seasoned with cinnamon, clove, and other spices, apple butter is usually spread on bread, used as a side dish, an ingredient in baked goods, or as a condiment. Apple butter may also be used on sandwiches to add an interesting flavor, but is not as commonly used as in historical times.

Do you refrigerate apple butter? ›

Once the apple butter has cooled and been placed into jars or airtight containers, store using the following guidelines: Refrigerator Storage – You can store the apple butter in the fridge for up to 1 month. Freezer Storage – You can store the apple butter in the freezer for up to 1 year.

What kind of cheese goes with apple butter? ›

Since it's sweet, apple butter can pair with many different kinds of cheeses — try your favorites and see what works best. If you need some suggestions to begin, try a sharp cheddar, an oozy brie, or a tangy chèvre.

Why does my apple butter taste like applesauce? ›

Applesauce is a fairly quick process, cooked apples run through a food mill. Apple butter is basically concentrated apple sauce, cooked down even more until it's thicker, silkier, and more intensely apple flavored. Like the difference between tomato sauce and tomato paste, essentially.

Why is my homemade apple butter runny? ›

Apple butter will thicken as it cools, so don't worry if it still looks a little runny in the slow cooker! If you still need to thicken your apple butter, you can continue to cook it uncovered in your crock pot or simmer it on the stove.

Should I use baking soda or baking powder in cookies? ›

Baking soda is typically used for chewy cookies, while baking powder is generally used for light and airy cookies. Since baking powder is comprised of a number of ingredients (baking soda, cream of tartar, cornstarch, etc.), using it instead of pure baking soda will affect the taste of your cookies.

How can I make my cookies fluffier instead of flat? ›

Baking powder or flour in excess will cause cookies to rise more, making them more fluffy and cakey. Increased sugar will make them caramelize more and increased fat will make the dough heavier and richer, all increasing retention of water in the dough- these all add up to chewier cookies.

Why do my cookies get hard after they cool? ›

Cookies become hard when the moisture in them evaporates. This can be caused by leaving them out in the air for too long, baking them for too long, or storing them improperly.

It also may be that the kettle was not well seasoned allowing the apple butter to make more contact with the metal of the pot. There is no way to remove the metallic taste or the metallic elements from the finished product.

Does apple butter and peanut butter taste good together? ›

Apple butter and peanut butter were destined to be together, don't you think? Add a healthy dose of cinnamon with a touch of vanilla and maple syrup and you have one of my favourite butters of all time. It's a little sweet and ultra creamy, with a hint of tart apple to round it all out.

Can you eat apple butter like applesauce? ›

Apple butter and applesauce are similar. The key difference is that applesauce is made with water and sugar and fewer spices. Applesauce is also eaten on its own as a snack or as a side dish while apple butter, with its more concentrated flavor, is used as a condiment or topping for toast or muffins.

Can you eat apple butter on crackers? ›

Mix it with plain yogurt or cottage cheese like the Pennsylvania Dutch prefer. Spread on graham crackers. Spread on a melted cheese sandwich. Add several tablespoons to a can of baked beans (hot sauce optional).

Is apple butter good on crackers? ›

For an appetizer, I use this spread on wheat crackers. You could use any variety of cracker you like. Bagel chips, rye toast and even mini English muffins would be a great base for this easy apple butter spread.
